I love Pinch of Yum.
I've made a few of her recipes over the years.
And I kinda thought this recipe was going to take me awhile to make, but it all kinda came together rather quickly.
AND IT WAS GOOD.
I screwed up the mash a tinsy bit because I didn't have any cornmeal.
I thought I did, but I didn't, so my mash was watery, not creamy and thick.
But it was still delicious and I made it work.
For the most part, I try to stick to the recipes exactly, but I have no idea where I'd find kalettes, so we had to use boring old kale.
And I had crazy extra mash leftover that I tossed in the freezer.
I'll find a way to use it.
